Spinach and Tomato Chicken and Bacon Pasta with Gluten Free Sauce!

Make this chicken pasta gluten free. All you have to do is use gluten-free brown rice penne pasta instead of regular penne. You can also use gluten-free quinoa pasta or lentil pasta.

2 tablespoons of olive oil
1 lb chicken (chicken breast or tenderloin)
1 teaspoon red pepper
1 teaspoon of Italian spices (thyme, thyme, basil – combined)
5 tomatoes (medium size, chopped into large cubes)
1 cup of spinach cooked
5 cloves of garlic minced
1/4 teaspoon red paprika, crushed
6 bacon strips, COOKED, FAT drained and diced
1 1/3 cup half a half
1 1/3 cup Parmesan cheese, grated
10 oz penne pasta (use gluten-free brown rice penne for gluten-free version)
1/2 cup Parmesan cheese, grated, for serving

In a large frying pan, heat over high heat until 2 tablespoons of olive oil are heated. Add chicken and cook on high heat for 1 minute. While cooking, sprinkle red pepper and Italian spices on the uncooked sides of the chicken. Turn the chicken over and cook on the other side for 1 minute on high heat. Reduce the heat to medium, turn the chicken over again and cook for a few minutes until it does not turn pink in the middle. Remove the chicken from the pan and keep the chicken warm.
In the same pan (without chicken), add chopped tomatoes, spinach, garlic, crushed red pepper, 1/3 of chicken (sliced ​​in small strips) and half of the bacon (pre-cooked and poured from oil). Mix everything.
Add half a half and boil. After starting to boil only half and a half, add the grated Parmesan cheese – boil and mix immediately, just 1 minute (up to 2 minutes) until the cheese melts and the sauce turns creamy. Then, immediately remove it from the stove. If necessary, add more crushed red pepper and salt.

Meanwhile, bring a large bowl of water to boil, add pasta and cook according to the instructions. Pour the pasta, rinse with cold water and drain again.

Add pasta to the pan with sauce. Add the remaining half of the bacon (cooked and degreased). Add more salt if necessary. Slice the remaining 2/3 of the chicken into thin strips. Chicken strips and grated Parmesan cheese to serve pasta
